Energy balls are the most forgiving thing in this list — no baking, no thermometer, fifteen minutes start to finish. The only thing that reliably goes wrong is the ratio, and that is easy to correct.
Ingredients
- Natural peanut butter, unsweetened — ½ cup
- Rolled oats — 1 cup
- Seedless dates — 100g, or ¼ cup honey for over-ones
- Ground flaxseed or chia — 2 tablespoons
- Cocoa powder — 1 tablespoon, optional
- Cardamom or vanilla — a pinch
Makes about 20 balls.
Method
1. Lightly toast the oats in a dry pan for 3 to 4 minutes. Optional, but it removes the raw taste and makes a real difference.
2. Blitz the dates into a paste. If they're dry, soak 10 minutes in warm water and pat completely dry first — wet dates make a mixture that won't keep.
3. Mix everything in a bowl. Use your hands; a spoon won't get it combined.
4. Check the consistency. It should hold when squeezed. Too dry, add a tablespoon more peanut butter. Too sticky, add oats a spoon at a time.
5. Chill 20 minutes, then roll into balls. Chilling makes rolling far less messy.
Why natural peanut butter behaves differently
Commercial peanut butter contains added oils, sugar and stabilisers, which make it thick and uniform. Natural peanut butter is just ground peanuts, so it separates and is looser at room temperature.
Two practical consequences. Stir the jar thoroughly before measuring, or you'll take mostly oil from the top or mostly solids from the bottom. And expect to need slightly more oats to reach the same consistency.
Five variations
Chocolate. Add 2 tablespoons cocoa and roll in a little extra.
Coconut. Fold in ¼ cup desiccated coconut and roll the finished balls in more.
Seeds. Add 2 tablespoons of mixed pumpkin and sunflower seeds for crunch.
Ragi. Replace ¼ cup of the oats with roasted ragi flour.
Trail mix. Add chopped raisins, cranberries and nuts. The most tiffin-friendly version.
Storage
Airtight in the fridge for two weeks, or frozen for three months. They firm up cold — take them out ten minutes before eating.
For children
Roll smaller for little hands and supervise while eating. Check for nut allergy before serving, and note that honey should not be given below one year — use dates instead.
